Coconut Lime Cupcakes
My first try at these Thai-inspired cupcakes involved:
- taking a standard buttercream recipe and swapping the milk for fresh lime juice and adding some lime zest
- taking a standard vanilla cake recipe and removing the vanilla and swapping 1/4 cup of milk for 1/4 cup of lime juice and adding some zest
I then topped the frosted cupcakes with toasted, unsweetened coconut that I tossed in some granulated sugar.
All in all the cupcakes tasted pretty good, but I found them for one too sweet and secondly tasting mostly of lime and not so much of coconut. I plan to mess with the recipe some and see if I can't get at something a little less cloying. For one, I plan to substitute most of the milk with coconut milk and plan on getting some fresh coconut in there somewhere.

is there a healthier substitute for confectioners sugar in frosting?
like something that provides the right spreading consistency to frosting so that its not runny but at the same time not be so sweet like confectioners sugar?

Btw, when I'm reading your recipes and posts, the links to the right cut off part of the text, is it me?
The cutting off of the text is an issue with the three column CSS I coded up. It is fine, however, if the browser window is opened up to fit the 900 pixels the layout needs. I view the blog with the browser window open fully on my tiny laptop (13" screen)... So try maximizing the browser window. That should fix it.
I made these cupcakes this weekend and I substituted the remainin milk for coconut milk. It worked pretty well and the cupcakes were a hit. The only adjustment I would do next time is add more lime juice and zest to the batter.
